Instructions
Preheat your oven to 400°F (200°C).
In a large mixing bowl, combine the minced garlic, olive oil, lemon zest, lemon juice, paprika, red pepper flakes, salt, and pepper. Mix well.
Add the shrimp to the bowl and toss until they're well coated with the marinade. Let them sit for about 15 minutes to absorb the flavors.
Arrange the shrimp in a single layer on a baking sheet lined with parchment paper.
Roast in the preheated oven for 8-10 minutes, or until the shrimp are pink and opaque. Be careful not to overcook them.
Once cooked, remove the shrimp from the oven and garnish with freshly chopped parsley.
Notes
Serve on a bed of quinoa or rice with extra lemon juice and parsley for garnish.
