1/4cuphoney or maple syrup (adjust based on sweetness preference)
1tablespoonlime juice
1/2teaspoonvanilla extract
1/4cupshredded coconut (sweetened or unsweetened, for added texture)
Instructions
In a blender, combine the coconut milk, fresh pineapple chunks, honey (or maple syrup), lime juice, and vanilla extract. Blend until you have a smooth mixture.
Taste and adjust the sweetness if needed by adding more honey or syrup.
Stir in the shredded coconut into the blended mixture to add texture.
Pour the mixture into popsicle molds, leaving a little space at the top as the mixture will expand when frozen.
Insert popsicle sticks and place the molds in the freezer.
Freeze for at least 4-6 hours or until completely solid.
Once frozen, run the molds under warm water for a few seconds to help release the popsicles. Gently pull the popsicles out of the molds.
Notes
Serve with a slice of fresh pineapple or a sprig of mint for a tropical touch.
