Instructions
Preheat your oven to 350°F (175°C) and grease an 8x8 inch baking pan or line it with parchment paper.
In a mixing bowl, combine the cooked and mashed sweet potatoes, almond butter, and maple syrup. Stir until the mixture is smooth and well combined.
Sift in the cocoa powder and oat flour. Add the baking powder, vanilla extract, and salt. Mix until you have a thick batter.
Fold in the dark chocolate chips, reserving a few to sprinkle on top before baking.
Pour the batter into the prepared baking pan, spreading it evenly. Sprinkle the reserved chocolate chips on top if desired.
Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out mostly clean (a few moist crumbs are fine).
Once done, allow the brownies to cool in the pan for about 10 minutes, then transfer them to a wire rack to cool completely before slicing.
Notes
Use dairy-free chocolate chips for a vegan option.
