In a blender, combine the sliced strawberries, fresh lemon juice, honey (or agave syrup), water, lemon zest, and a pinch of salt. Blend until the mixture is smooth and well combined.
Taste the mixture and adjust the sweetness if needed by adding more honey or agave syrup. Blend again if necessary.
Pour the blended mixture into popsicle molds, leaving a little space at the top for expansion.
Insert popsicle sticks into the molds and carefully transfer them to the freezer.
Freeze for at least 4-6 hours, or until fully frozen.
To release the popsicles, run warm water over the outside of the molds for a few seconds or gently twist the molds.

Serve on a rustic wooden board, garnished with fresh strawberry slices and lemon wedges for a vibrant display!
