In a blender, combine the fresh strawberries, frozen banana, Greek yogurt, and softened cream cheese.
Add the honey or maple syrup, vanilla extract, and milk to the blender.
Blend everything on high until smooth and creamy. You may need to stop and scrape down the sides of the blender to ensure all ingredients are well combined.
Taste the smoothie and add more sweetener if desired, then blend again briefly.
Pour the smoothie into chilled glasses, and sprinkle crushed graham crackers on top for that cheesecake crust effect.
