Instructions
Preheat your oven to 350°F (175°C) and grease a mini muffin pan or line with paper liners.
In a mixing bowl, combine melted butter, vegetable oil, granulated sugar, and brown sugar. Whisk until the mixture is smooth and well blended.
Add the eggs one at a time to the butter-sugar mixture, whisking well after each addition. Stir in the vanilla extract.
Sift in the cocoa powder and flour, gently folding until just combined. Be careful not to over-mix; a few lumps are fine.
Fold in the chocolate chips for added richness.
Spoon a tablespoon of brownie batter into each mini muffin cup, filling each about halfway.
Add a small dollop (about 1 teaspoon) of salted caramel sauce on top of the batter in each muffin cup.
Top with a bit more brownie batter until each cup is about three-quarters full.
Bake for 15-18 minutes, or until a toothpick inserted comes out mostly clean (a few moist crumbs are desired).
Remove from the oven and let the brownie bites cool for a few minutes in the pan before transferring them to a wire rack.
Just before serving, sprinkle each brownie bite with a pinch of sea salt to enhance the caramel flavor.
