Instructions
Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper and set aside.
In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth and fluffy. This should take about 3-4 minutes.
Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
Fold in the semi-sweet chocolate chips and the crushed peppermint candies until evenly distributed throughout the dough.
Using a cookie scoop or tablespoon, drop dough balls onto the prepared baking sheets, spacing them about 2 inches apart.
Optionally, sprinkle a few additional crushed peppermint candies on top of each dough ball for added festive flair.
Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden and the centers are set but soft.
Remove the cookies from the oven and let them cool on the baking sheets for about 5 minutes before transferring them to a wire rack to cool completely.

Serve on a festive plate and garnish with extra crushed peppermint candies for a colorful and inviting look. Consider wrapping a few in a cellophane bag tied with a ribbon as a delightful gift!
