Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large bowl, combine the mashed banana and peanut butter until smooth.
Add in the honey (or maple syrup) and vanilla extract, mixing well.
In another bowl, whisk together the rolled oats, baking powder, salt, and cinnamon.
Slowly add the dry ingredient mixture to the wet ingredients, stirring until just combined.
If using, fold in the chocolate chips for an extra treat.
Using a tablespoon, scoop out the dough and place it onto the prepared baking sheet, spacing them about 2 inches apart.
Flatten each cookie slightly with the back of the spoon to ensure even baking.
Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden.
Once baked, remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Optional chocolate chips can be added for extra flavor.
