Maple Cinnamon Roasted Almonds

Instructions
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a mixing bowl, combine the maple syrup, ground cinnamon, salt, vanilla extract, and coconut oil. Whisk until combined and smooth.
Add the raw almonds to the bowl and stir until they are evenly coated with the maple-cinnamon mixture.
Spread the coated almonds in a single layer on the prepared baking sheet.
Roast in the preheated oven for about 15-20 minutes, stirring halfway through to ensure even browning. Keep an eye on them to prevent burning.
Once they are golden brown and fragrant, remove them from the oven and let them cool on the baking sheet. The almonds will harden as they cool.
If desired, toss in the dried cranberries or raisins after the almonds have cooled for a chewy texture.
Once completely cooled, transfer the almonds to an airtight container for storage.
