Mango Paradise Coconut Overnight Oats

rolled oats

cup
coconut milk (canned or carton)

mango, diced

tablespoon
chia seeds

honey or maple syrup (optional)

coconut flakes for topping

fresh mint leaves for garnish
Instructions
In a medium mixing bowl, combine the rolled oats, chia seeds, and a pinch of salt. Stir well to combine.
In another bowl or measuring cup, whisk together the coconut milk, honey or maple syrup (if using), and vanilla extract.
Pour the coconut milk mixture over the oats and stir until all the oats are evenly coated.
Gently fold in the diced mango, reserving a few pieces for topping later.
Divide the oat mixture evenly into two mason jars or airtight containers.
Seal the jars and refrigerate overnight (or for at least 4-6 hours) to allow the oats to soak up the liquid and soften.
In the morning, give your oats a good stir and check the consistency. If it’s too thick, add a splash of coconut milk to loosen it.
Top each jar with additional diced mango, a sprinkle of coconut flakes, and a mint leaf for garnish.
Notes
Serve chilled in the jars for a beautiful breakfast display, or in a bowl for a more casual feel. Enjoy!
