Instructions
Preheat your oven to 425°F (220°C).
In a large mixing bowl, toss the cut fries with olive oil, garlic powder, oregano, salt, and pepper until evenly coated.
Spread the seasoned fries in a single layer on a baking sheet lined with parchment paper.
Bake in the preheated oven for 25-30 minutes, flipping halfway through until they are golden and crispy.
While the fries are baking, prepare the loaded toppings. In a small bowl, mix the Greek yogurt with a pinch of salt and set aside.
Once the fries are done, remove them from the oven and sprinkle the crumbled feta cheese generously over the hot fries.
Top the fries with halved cherry tomatoes, sliced Kalamata olives, and red onion.
Drizzle the seasoned Greek yogurt over the loaded fries for a creamy finish.
Finally, garnish with freshly chopped parsley for a pop of color.
Notes
Serve with extra Greek yogurt on the side for dipping.
