In a mixing bowl, combine the flaked salmon, breadcrumbs, chopped onion, dill, lemon zest, lemon juice, beaten egg, garlic powder, salt, and pepper. Mix until all ingredients are well blended.
Using your hands, form the mixture into patties, about 2 inches in diameter and 1/2 inch thick. You should get approximately 8 patties.
Heat 2 tablespoons of olive oil in a non-stick skillet over medium heat. Once the oil is hot, carefully add the patties to the skillet, making sure not to overcrowd the pan.
Cook the patties for about 4-5 minutes on each side or until they are golden brown and crispy. Add the remaining oil if needed for the second batch.
Once cooked, transfer the patties to a paper towel-lined plate to drain any excess oil. Serve warm.

Serve on a bed of mixed greens with lemon wedges and fresh dill.
