Prepare a Baking Sheet: Line a baking sheet with parchment paper for easy removal of the bark later.
Mix the Yogurt: In a bowl, combine the Greek yogurt with honey or maple syrup and lemon zest (if using). Stir until well blended.
Spread the Yogurt: Pour the yogurt mixture onto the prepared baking sheet, spreading it out evenly with a spatula to about ½ inch thick.
Add Toppings: Distribute the mixed berries evenly over the yogurt layer, gently pressing them in. Sprinkle chia seeds and granola on top for added texture.
Freeze: Place the baking sheet in the freezer for about 2-4 hours, or until the yogurt is fully frozen and firm.
Break Into Pieces: Once frozen, remove the bark from the freezer and peel it off the parchment paper. Break it into irregular pieces or squares with your hands.
Serve: Enjoy the Greek yogurt berry bark immediately.
