Instructions
In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat.
Add the sliced beef to the skillet in a single layer. Season with salt and pepper, and sear for about 2-3 minutes, until browned. Remove the beef from the skillet and set it aside.
In the same skillet, add the remaining tablespoon of oil. Once hot, add minced garlic and ginger, and sauté for about 30 seconds until fragrant.
Add the sliced bell peppers, broccoli florets, and julienned carrots to the skillet. Stir fry the vegetables for about 4-5 minutes until tender but still crisp.
Return the seared beef to the skillet. Pour in soy sauce, oyster sauce (if using), and stir well to combine everything.
Mix the cornstarch with water, then add it to the skillet. Stir constantly until the sauce thickens, about 1-2 minutes.
Drizzle sesame oil over the stir fry, and give it a final toss to combine all the flavors.
Remove from heat, and garnish with chopped scallions and sesame seeds before serving.
Notes
Feel free to add other vegetables or adjust the sauce to your taste.
