Prepare the Zoodles: Using a spiralizer, turn the zucchinis into noodles, also known as zoodles. Set aside.
Sauté Garlic: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant but not browned.
Create the Alfredo Sauce: Reduce heat to low and pour in the heavy cream, stirring to combine. Gradually add the grated Parmesan cheese, garlic powder, salt, black pepper, and nutmeg (if using). Continuously stir until the cheese has melted, and the sauce is smooth.
Add Zoodles: Increase the heat to medium. Add the zoodles to the skillet, and toss gently to coat them in the sauce. Cook for about 3-5 minutes, or until the zoodles are just tender but still have a slight crunch.
Serve: Remove from heat and transfer the Garlic Parmesan Zoodle Alfredo to a serving dish. Garnish with freshly chopped parsley and a touch more grated Parmesan if desired.
