Spread the sweet potato mixture in a single layer on a baking sheet lined with parchment paper.
Roast in the preheated oven for 20 minutes.
After 20 minutes, remove the baking sheet, sprinkle the grated Parmesan cheese over the sweet potatoes, and toss gently to combine.
Return to the oven and roast for an additional 10-15 minutes, or until the sweet potatoes are tender and golden brown.
Once done, remove from the oven and let them cool slightly. Garnish with fresh chopped parsley before serving.
