Begin by placing the cubed sweet potatoes in a large pot and filling it with water until the potatoes are covered.
Bring the water to a boil over medium-high heat, then reduce the heat to a simmer and cook the sweet potatoes for about 15-20 minutes, or until fork-tender.
While the sweet potatoes are cooking, in a small saucepan over medium heat, melt the butter. Once melted, add the minced garlic and sauté for 2-3 minutes, until fragrant but not browned. Remove from heat.
Once the sweet potatoes are tender, drain them well and return them to the pot.
Add the garlic butter to the sweet potatoes along with the milk, chopped parsley, chopped thyme, salt, and pepper.
Using a potato masher or fork, mash the sweet potatoes until smooth and creamy, adjusting the milk for desired consistency.
Taste and adjust seasoning if necessary.
