Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish with cooking spray or butter.
Open the cans of cinnamon roll dough and separate the rolls. Cut each roll into quarters and place them evenly in the prepared baking dish.
In a large mixing bowl, whisk together the eggs, milk, heavy cream, vanilla extract, ground cinnamon, nutmeg, and maple syrup until well combined.
Pour the egg mixture evenly over the cut cinnamon rolls in the baking dish, ensuring that all the pieces are coated.
Gently press down on the cinnamon rolls with a spatula to help them absorb the liquid. Allow to sit for about 10 minutes to soak.
Bake in the preheated oven for 25-30 minutes or until golden brown and cooked through in the center.
While the casserole bakes, you can prepare the icing from the cinnamon roll packages (if desired) by whisking together the icing ingredients from the rolls.
Once the casserole is done baking, remove it from the oven and drizzle with the icing. Let it cool slightly before serving.
Serve warm, topped with optional powdered sugar, whipped cream, and fresh berries if desired. Drizzle with additional maple syrup for extra sweetness.
