In a bowl, combine the brown sugar, soy sauce, minced garlic, olive oil, ground ginger, black pepper, salt, and apple cider vinegar. Whisk together until smooth and the brown sugar is mostly dissolved.
Place the chicken legs in a large resealable plastic bag or a glass dish. Pour the marinade over the chicken, ensuring all pieces are well-coated. Seal the bag or cover the dish and refrigerate for at least 1 hour (or overnight for better flavor).
Preheat your oven to 400°F (200°C) while the chicken is marinating.
Line a baking sheet with aluminum foil for easy cleanup and place a wire rack on top.
Remove the chicken from the marinade and place on the wire rack. Drizzle the leftover marinade over the chicken for extra flavor.
Bake in the preheated oven for 35-40 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the skin is caramelized and crispy.
If you prefer an extra crispy skin, turn on the broiler for the last 2-3 minutes, keeping a close eye to prevent burning.
Once done, remove from the oven and let it rest for 5 minutes. Garnish with chopped green onions before serving.
