Rub the chicken breasts with olive oil and season them generously with Cajun seasoning.
Heat a skillet over medium-high heat. Once hot, add the seasoned chicken breasts and cook for about 6-7 minutes per side, or until fully cooked (internal temperature should reach 165°F). Remove the chicken from the skillet and let it rest for a few minutes.
Once rested, slice the blackened chicken into thin strips.
Lay a tortilla flat and layer chopped romaine lettuce in the center. Top with sliced blackened chicken, cherry tomatoes, and grated Parmesan cheese. Drizzle Caesar dressing over the top.
Fold the sides of the tortilla inwards and then roll it tightly from the bottom up to create a wrap.
Slice the wrap in half to reveal the colorful inside. Optionally, garnish with fresh basil leaves on top.
