In a large mixing bowl, combine the almond butter and honey (or maple syrup). Stir until smooth and well combined.
Add the vanilla extract and sea salt to the mixture, and mix thoroughly.
Gradually incorporate the rolled oats, chia seeds, and coconut flakes into the wet mixture, stirring until everything is evenly combined.
Fold in the chopped dried cranberries, ensuring they are distributed evenly throughout the mixture.
Once well combined, cover the bowl with plastic wrap and refrigerate the mixture for 30 minutes to help it firm up.
After chilling, remove the mixture from the refrigerator. Using your hands, scoop and roll the mixture into small bite-sized balls (about 1 inch in diameter).
Place the energy bites on a baking sheet lined with parchment paper and refrigerate again for at least 1 hour to firm up.
Once set, store the energy bites in an airtight container in the refrigerator for up to a week, or freeze for longer storage.
